This Chicken Taco Pasta with Catalina Dressing is a tasty take on regular pasta dishes. Chicken that has been seasoned, tangy Catalina dressing, and fresh vegetables make a tasty and filling meal.
Ingredients: 1 lb chicken breast, diced. 1 tbsp olive oil. 1 packet taco seasoning. 8 oz pasta of your choice. 1 cup Catalina dressing. 1 cup cherry tomatoes, halved. 1 cup shredded cheddar cheese. 1/2 cup diced red onion. 1/4 cup chopped cilantro. Salt and pepper to taste.
Instructions: In a large skillet, heat olive oil over medium heat. Add diced chicken breast and sprinkle taco seasoning over the chicken. Cook until chicken is no longer pink and cooked through, about 6-8 minutes. Meanwhile, cook pasta according to package instructions until al dente. Drain and set aside. Once the chicken is cooked, add cooked pasta, Catalina dressing, cherry tomatoes, shredded cheddar cheese, diced red onion, and chopped cilantro to the skillet. Stir well to combine. Season with salt and pepper to taste. Cook for an additional 2-3 minutes until everything is heated through. Serve hot, garnished with additional cilantro if desired.
