Ingredients: 1 medium head cauliflower, chopped. 1/2 cup unsweetened cocoa powder. 1/2 cup coconut milk. 1/4 cup keto-friendly sweetener such as erythritol or stevia. 2 teaspoons vanilla extract. Pinch of salt. Optional toppings: shredded coconut, sliced almonds, raspberries.
Instructions: Steam or boil cauliflower until very soft, about 10-15 minutes. Drain the cauliflower and let it cool slightly. In a blender or food processor, combine the cooked cauliflower, cocoa powder, coconut milk, sweetener, vanilla extract, and salt. Blend until smooth and creamy. Taste and adjust sweetness if needed. Transfer the pudding to serving bowls and refrigerate for at least 2 hours to chill and set. Before serving, optionally top with shredded coconut, sliced almonds, or fresh raspberries.
