Ingredients: 1 head of cauliflower, cut into florets. 3 cloves of garlic, minced. 2 tablespoons olive oil. 1/4 cup coconut milk. 1 teaspoon dried rosemary. 1 teaspoon dried thyme. Salt and pepper to taste.
Instructions: Place the cauliflower florets and minced garlic in a slow cooker. Drizzle olive oil over the cauliflower and garlic, then season with salt, pepper, rosemary, and thyme. Cover the slow cooker and cook on low for 4-5 hours, or until the cauliflower is tender. Using a potato masher or immersion blender, mash the cooked cauliflower until smooth.
