I know a lot of folk songs of different states cause I'm addicted to it as I love learning about new cultures through music and art. Chole bhature
An authentic dish with an authentic taste. Chole bhature is an indian most popular vegetarian dish that no one wants to deny to have it. There are so many kinds of chole bhature full of spices and loaded with oil, butter and paneer but today I will show you a very simple way to make that anyone can try with its real taste. Here I am making chole without onion. You can add onion according if you want. So let start...
Ingredients for chole boiling
500g Chole (soaked overnight)
1 Bay leaf
1 Black cardamom
1" Ginger (cuted in Julien)
Salt to taste
For Gravy For bhature
500g Tomatoes. 500g Maida
2 Tsp mustard oil. 1 Cup sour curd or chass
3 Green chilli. 1 small TSP baking powder
2 Red dry chilli. Water as required
1 TSP cumin seed. Required oil for frying
1 TSP turmeric.
⅓ TSP Coriander powder
⅓ TSP Amchoor powder
1 TSP Red chilli
¼ TSP Garam masala
Salt to taste
Recipe
Put a big Bowl for maida and add baking powder and mix them well. Now add chass or dahi again and mix well. Now add required weather gradually to make a perfect dough and knead it perfectly till it turns soft. Now apply some oil refined or mustard whatever you want. Now keep it aside till it is soft otherwise the bhature will not be fluffy. So now start making chole.
First boil the chole on a pressure cooker added with black cardamom ginger Julien and salt as per taste with 400ml water and cover the lid and take 6 to 7 whistles, let the pressure released by itself now check whether it is cooked properly. Add amchoor powder in it before we mix it with gravy and mash them all little bit so that the consistency will be thick and nice
Now cut the tomatoes and green chilli, add them in a mixer jar and make a fine puree.
Put a pan on medium flame and add some mustard oil let it warmup completely otherwise the taste will be smelly after that add all dry spices and jeera with hing give it a nice mix now add the puree and add red chilli powder turmeric powder coriander powder cook for 10 min or it until it release oil by itself and continue to give mix every 2 min. Now add very lit water again and mix the gravy for once. Now add the cooked chole with the gravy and add the required water according to your consistency. Now cook them on a high flame until a boil comes. After that, keep the flame low and Cook it for more than 5 to 10 min until the aroma begins to start spreading. Turn off the flame and add some garam masala into that. it is ready to serve.

Notes:-
You can serve chole with bhatura roti or puri as your taste
You can add some fresh green coriander for garnishing.
Knead the maida first before making chole.
Do not add so much water in maida.
It is a very simple way of making chole you can make it more spicy as per your taste.
