A savory and smoky twist on stuffed sweet onions, cooked to perfection on cedar planks. The combination of ground sausage, cheddar cheese, and barbecue sauce creates a mouthwatering filling that complements the natural sweetness of the onions.
Ingredients: 4 large sweet onions. 4 cedar planks, soaked in water for 1 hour. 1 lb ground sausage. 1 cup breadcrumbs. 1 cup shredded cheddar cheese. 1/2 cup chopped fresh parsley. 1/4 cup barbecue sauce. Salt and pepper to taste.
Instructions: Preheat the grill to medium-high heat. Cut the top off each onion and peel the outer layers, leaving the base intact. Scoop out the center of each onion, creating a hollow space for stuffing. In a skillet, cook the ground sausage until browned. Drain excess fat. In a large bowl, mix the cooked sausage, breadcrumbs, cheddar cheese, parsley, and barbecue sauce. Season the mixture with salt and pepper to taste. Stuff each hollowed onion with the sausage mixture, pressing it down gently. Place each stuffed onion on a soaked cedar plank. Place the cedar planks on the preheated grill and cover. Cook for 25-30 minutes or until the onions are tender and the stuffing is golden brown. Carefully remove the cedar planks from the grill and let them rest for a few minutes. Serve the cedar plank stuffed sweet onions hot, garnished with additional parsley if desired.
