The cheddar cheese, green olives, and fresh chives in these savory muffins give them a lot of flavor. They taste great and fill you up as a snack or side dish.
Ingredients: 1 1/2 cups all-purpose flour. 1 1/2 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp salt. 1/4 tsp black pepper. 1/4 cup extra virgin olive oil. 1 cup buttermilk. 1 large egg. 1 1/2 cups shredded cheddar cheese. 1/2 cup chopped green olives. 1/4 cup chopped fresh chives.
Instructions: Preheat your oven to 375F 190C and grease a muffin tin or line it with muffin liners. In a large mixing bowl, combine the all-purpose flour, baking powder, baking soda, salt, and black pepper. In a separate bowl, whisk together the extra virgin olive oil, buttermilk, and egg. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the shredded cheddar cheese, chopped green olives, and chopped fresh chives. Divide the muffin batter evenly among the prepared muffin cups. Bake in the preheated oven for 18-20 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean. Remove the muffins from the oven and allow them to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
