This Broccoli and Cauliflower Swiss Cheese Side Dish is a delicious and nutritious keto-friendly option. The combination of roasted broccoli and cauliflower with melted Swiss cheese creates a flavorful and satisfying dish that pairs perfectly with any main course.
Ingredients: 1 head broccoli, cut into florets. 1 head cauliflower, cut into florets. 1 cup shredded Swiss cheese. 2 tablespoons olive oil. 2 cloves garlic, minced. Salt and pepper, to taste.
Instructions: Preheat the oven to 400F 200C. In a large mixing bowl, toss the broccoli and cauliflower florets with olive oil, minced garlic, salt, and pepper until evenly coated. Spread the coated florets in a single layer on a baking sheet. Roast in the preheated oven for 20-25 minutes, or until the vegetables are tender and lightly browned. Remove the baking sheet from the oven and sprinkle the shredded Swiss cheese over the roasted broccoli and cauliflower. Return the baking sheet to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly. Serve hot and enjoy!
