This fun take on pancakes is these Mini Sausage Pancake Muffins. They're full of tasty sausage and cheese and are great for breakfast or brunch.
Ingredients: 1 cup all-purpose flour. 2 tablespoons sugar. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1 cup buttermilk. 1 egg. 2 tablespoons melted butter. 1/2 cup cooked mini sausages, chopped. 1/4 cup shredded cheddar cheese. Cooking spray, for muffin tin.
Instructions: Preheat your oven to 375F 190C. In a mixing bowl, combine the all-purpose flour, sugar, baking powder, baking soda, and salt. In another bowl, whisk together the buttermilk, egg, and melted butter. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the chopped mini sausages and shredded cheddar cheese. Spray a mini muffin tin with cooking spray to prevent sticking. Fill each muffin cup about 2/3 full with the pancake batter mixture. Bake in the preheated oven for 10-12 minutes or until the muffins are golden brown and cooked through. Remove from the oven and let cool for a few minutes before serving.
