Coconut Cheese (raw vegan) by #RawChefYin. Some of my students are allergic to cashews and macadamia nuts which are usually used to make tree nut cheese so I decided I'd experiment with coconut instead. Also when I attended Chef Made Runatha's class in Bali, he spoke about how he liked to use local ingredients such as coconut because of the abundance in Bali. We have so much fresh coconuts here in Malaysia as well so figured I might as well tap on them. Also, JC in Penang has been raving about Wonder Wilderfarm's coconut cheese I had to make it as I have a bit more room to breathe and be creative this month. I'm super happy with the results. This was fermented for 25.5 hours just with wild fermentation, and then flavoured, shaped and then dehydrated in the to create a beautiful rind. Having a creative time making lots of different kinds of nut and seed cheeses for the upcoming raw vegan cheese class. Am totally enjoying it.
