Julie's version of Korean-style popcorn chicken has soft chicken bites covered in a tasty marinade and a crunchy top. It's great as a snack or a meal.

Ingredients: 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces. 1/2 cup cornstarch. 1/4 cup all-purpose flour. 1/4 cup soy sauce. 2 tablespoons gochujang Korean chili paste. 2 tablespoons honey. 2 cloves garlic, minced. 1 teaspoon grated ginger. 1/4 teaspoon black pepper. Vegetable oil, for frying. Sesame seeds and chopped green onions, for garnish.

Instructions: For the marinade, put soy sauce, gochujang, honey, garlic, ginger, and black pepper in a bowl and mix them together. Toss the chicken pieces in the marinade to coat them, then set them aside for 30 minutes. Combine cornstarch and flour in a different bowl. Coat the chicken pieces in the mixture of flour and salt, and then shake off the extra. In a deep pot or skillet, heat the vegetable oil to 350F 175C. It will take about 4 to 5 minutes for each batch of chicken to turn golden brown and be fully cooked. Take the chicken out of the oil and put it on paper towels to drain. Add chopped green onions and sesame seeds to the cooked chicken to make it look nice. Serve hot with the sauce of your choice.

These BBQ chicken and bacon bites are great for low-carb snacks or appetizers because they don't have a lot of carbs. They're simple to make and will be a hit at your next party!

Ingredients: 1 lb boneless, skinless chicken breasts, cut into 1-inch chunks. 8 slices bacon, cut into halves. 1/2 cup sugar-free BBQ sauce. 1 tsp smoked paprika. 1/2 tsp garlic powder. 1/2 tsp onion powder. Salt and pepper to taste. Toothpicks, for securing.

Instructions: Before you start cooking, heat the oven to 375F 190C. Put the sugar-free BBQ sauce, smoked paprika, garlic powder, onion powder, salt, and pepper in a small bowl. Mix them together. Put a toothpick through the middle of each chicken chunk and wrap it in a half slice of bacon. Put the chicken bites wrapped in bacon on a baking sheet that has been lined with parchment paper. Cover the chicken in bacon and brush the tops with the BBQ sauce mix. Heat the oven and put the dish in it. Bake for 20 to 25 minutes, or until the bacon is crispy and the chicken is cooked all the way through. Take it out of the oven and let it cool down a bit before you serve it. Instructions: Beat the soy sauce, honey, garlic powder, sesame oil, and cornstarch together in a small bowl with a whisk until everything is well mixed. Dice the chicken and put it in a large bowl. Pour the sauce over the chicken and make sure that each piece is well covered. Put it in the fridge for at least 30 minutes to marinate. Get the oven ready by heating it up to 400F 200C. Put parchment paper or a little oil on a baking sheet and line it with it. Leave space between each piece of chicken on the baking sheet as you spread them out after marinating. Turn the chicken over halfway through baking in a hot oven for 15 to 20 minutes, or until it is cooked all the way through and golden brown. To make it look nicer, add sesame seeds and sliced green onions after taking it out of the oven. Serve hot as a starter or as a main dish with rice and vegetables.
