Ingredients: 4 boneless, skinless chicken breasts, cut into 1-inch cubes. 8 fresh jalapeno peppers, halved and seeded. 8 slices of bacon, cut in half. 1/2 cup cream cheese, softened. 1/2 cup shredded cheddar cheese. 1 teaspoon garlic powder. 1 teaspoon onion powder. 1/2 teaspoon paprika. Salt and pepper to taste. Toothpicks for securing bacon.
Instructions: Preheat your oven to 375F 190C. In a bowl, mix the softened cream cheese, shredded cheddar cheese, garlic powder, onion powder, paprika, salt, and pepper until well combined. Fill each halved and seeded jalapeno pepper with a generous amount of the cream cheese mixture. Wrap each chicken cube with a half-slice of bacon and secure it with a toothpick. Place a stuffed jalapeno pepper on top of each bacon-wrapped chicken cube and secure it with another toothpick to hold everything together.
