Curried Yogurt Sauce goes well with a tasty and healthy Chickpea Burger. These homemade veggie burgers are full of protein and spices, so any burger lover can enjoy them without the meat.
Ingredients: 1 15-ounce can chickpeas, drained and rinsed. 1/2 cup breadcrumbs. 1/4 cup red onion, finely chopped. 1/4 cup red bell pepper, finely chopped. 1/4 cup fresh cilantro, chopped. 1 clove garlic, minced. 1 teaspoon ground cumin. 1/2 teaspoon paprika. Salt and pepper to taste. 4 burger buns. 1 cup Greek yogurt. 1 teaspoon curry powder. 1 tablespoon lemon juice. Lettuce, tomato, and red onion slices for garnish.
Instructions: Put breadcrumbs, red onion, red bell pepper, cilantro, garlic, cumin, paprika, salt, and pepper in a food processor and blend them all together. Pulse the ingredients together until they are mostly smooth but still have some chunks. Make burger patties out of the four equal parts of the mixture. Spread cooking spray or oil on a grill or skillet and heat it over medium-high heat. They should be cooked for four to five minutes on each side, or until they are firm and golden brown. To make the curry yogurt sauce, mix Greek yogurt, curry powder, and lemon juice in a small bowl with a whisk. You can grill or toast the burger buns until they are just barely crispy. Use a lot of curried yogurt sauce to cover the bottom half of each bun. A chickpea patty should be put on top of the sauce. Then lettuce, tomato, and red onion slices should be added. Spread the other half of the bun on top of the burger, and then serve it with the curried yogurt sauce.
