There is no gluten in these crunchy chickpea fritters, and they taste great. They're great for a quick snack or starter, and they'll satisfy your cravings for something crunchy and tasty. Plus they're really simple to make!
Ingredients: 1 can 15 oz chickpeas, drained and rinsed. 1/2 cup gluten-free breadcrumbs. 1/4 cup finely chopped fresh parsley. 1/4 cup finely chopped onion. 1 garlic clove, minced. 1/2 teaspoon ground cumin. 1/2 teaspoon paprika. Salt and pepper to taste. 2 tablespoons olive oil.
Instructions: In a food processor, pulse the chickpeas until coarsely chopped. Transfer the chopped chickpeas to a mixing bowl. Add breadcrumbs, parsley, onion, garlic, cumin, paprika, salt, and pepper to the bowl. Mix until well combined. Form the mixture into small patties or balls, pressing firmly to shape. Heat olive oil in a skillet over medium heat. Cook the fritters in batches for about 3-4 minutes per side, or until golden brown and crispy. Remove from the skillet and place on a paper towel-lined plate to drain excess oil. Serve hot with your favorite dipping sauce or enjoy them plain!

Green Bean & Chickpea Fritters *Vegetarian* Yields 10 fritters. Each fritter packs 74 calories, 7 grams of Carbohydrate & Less than 3 grams of Fat. Prep Time: 10 minutes Cook Time: 15 minutes Ingredients: -1 can of Garbanzo beans drained & rinsed -1 cup of Green Beans -2 medium Eggs -2 tbsp of All-Purpose Flour -½ cup of Breadcrumbs -1 tbsp of Garlic Powder -Dash of Black Pepper -1 tbsp of Dried Basil -1 tbsp of Light Olive Oil Steps: -Rinse & dry all vegetables & legumes. -In a large bowl, combine eggs, green beans, garbanzo beans, flour, garlic powder, black pepper & dried basil. Mix with a spatula until everything is fully incorporated. -In a large cast iron skillet, heat a drizzle of light olive oil over a medium flame. Spoon out 10 balls out of your green & garbanzo bean mix. -Smash green & garbanzo bean balls into “patty form” & place in your oiled cast iron skillet, frying on each side for about 7 minutes. -Once your fritters appear crispy, turn off your stove heat & plate over a paper towel, dabbing off any extra oil.
