These vegan chickpea nuggets are a delicious and wholesome alternative to traditional chicken nuggets. Packed with protein and flavor, they are perfect for satisfying cravings while being kind to animals.
Ingredients: 2 cups cooked chickpeas, drained and rinsed. 1/2 cup breadcrumbs. 1/4 cup nutritional yeast. 1/4 cup finely chopped onion. 2 cloves garlic, minced. 1 teaspoon dried parsley. 1/2 teaspoon paprika. Salt and pepper to taste. 2 tablespoons olive oil.
Instructions: Warm the oven up to 190C 375F. Pulse the chickpeas in a food processor until they are roughly mashed. Put the mashed chickpeas in a bowl and add the nutritional yeast, onion, garlic, parsley, paprika, salt, and pepper. Mix everything together well. Use your hands to shape the mixture into nuggets. Put the nuggets on a baking sheet that has parchment paper on it. Apply olive oil to the nuggets' tops. After the oven is hot, bake for 25 to 30 minutes, flipping once, until golden brown and crispy. Serve hot with the sauce of your choice.
