Vegan pancakes made with ripe bananas and oats that taste great and are good for you. This would be great for a hearty breakfast or brunch.
Ingredients: 2 ripe bananas. 1 cup oats. 1/2 cup almond milk. 1 tsp baking powder. 1/2 tsp vanilla extract. 1/4 tsp cinnamon.
Instructions: In a blender, combine bananas, oats, almond milk, baking powder, vanilla extract, and cinnamon until smooth batter forms. Preheat a non-stick skillet over medium heat. Pour batter onto skillet to form pancakes of desired size. Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for an additional 2-3 minutes until golden brown. Repeat with remaining batter. Serve warm with maple syrup, sliced bananas, or any desired toppings.
