This Moroccan Chickpea Tagine is a flavorful vegan dish inspired by the vibrant cuisine of Morocco. It combines chickpeas, aromatic spices, tomatoes, dried apricots, and almonds, creating a hearty and satisfying meal. Perfect for cozy dinners or entertaining guests, this tagine is bursting with North African flavors.
Ingredients: 2 cups cooked chickpeas. 2 tablespoons olive oil. 1 onion, chopped. 2 cloves garlic, minced. 1 teaspoon ground cumin. 1 teaspoon ground coriander. 1 teaspoon paprika. 1/2 teaspoon ground cinnamon. 1/4 teaspoon ground turmeric. 1/4 teaspoon cayenne pepper optional for heat. 1 cup diced tomatoes. 1 cup vegetable broth. 1/4 cup chopped dried apricots. 1/4 cup sliced almonds. Salt and pepper to taste. Fresh cilantro for garnish.
Instructions: Warm up the olive oil in a big pan or tagine over medium-low heat. It will take about 5 minutes of cooking after adding the chopped onion and minced garlic. Add the ground coriander, paprika, cinnamon, turmeric, and cayenne pepper if using. Mix everything together and cook for one more minute until it smells good. Cook the chickpeas and add them to the pot. Then add the vegetable broth, chopped dried apricots, and sliced almonds. Add pepper and salt to taste. Lower the heat, cover, and let it simmer for 15 to 20 minutes, stirring every now and then. Take the sauce off the heat once it has thickened and the flavors have mixed. Add fresh cilantro as a garnish before serving. Serve hot with bread or couscous.
