Ingredients: 1 lb ground turkey. 1 onion, diced. 2 cloves garlic, minced. 1 bell pepper, chopped. 1 can 15 oz black beans, drained and rinsed. 1 can 15 oz kidney beans, drained and rinsed. 1 can 15 oz corn kernels, drained. 1 can 15 oz diced tomatoes. 1 can 8 oz tomato sauce. 1 packet taco seasoning. 4 cups chicken broth. Salt and pepper to taste. Optional toppings: shredded cheese, sour cream, chopped green onions, cilantro.
Instructions: Over medium-low heat, brown the ground turkey in a large pot. Dice the onions, mince the garlic, and chop the bell pepper. Cook the vegetables until they get soft. Black beans, kidney beans, corn, diced tomatoes, and tomato sauce should all be added. Add the taco seasoning and mix it in well. Add the chicken broth and season with pepper and salt. Bring up the temperature. Lower the heat to a simmer and let it cook for 20 to 25 minutes. This will give the flavors time to blend. If you want, you can serve it hot with sour cream, green onions, cilantro, and shredded cheese on top.
