Chimchurri Sauce

1/2 c olive oil

2 tbs red wine vinegar

1/2 c parsley, chopped

3-4 cloves garlic, chopped

2 small red chilis, deseeded and chopped

2/3 tsp dried oregano

1 tsp course salt

1/2 tsp pepper

Mix ingredients. Allow sit for at least 10 min, and ideally 2+ hours.

Use it to baste meats while grilling or barbecuing, or add to basically anything.

Dinner tonight: Turmeric and paprika chickpeas on chimchurri laden salad. There is a garden burger hiding in there as well. Feta for a little salty. Overall, VERY flavorful, my breath can attest!
