Sweet Red Bean Soup is a classic Chinese dessert soup known for its comforting sweetness and creamy texture. This version uses adzuki beans, rock sugar, and fragrant pandan leaves for a delightful flavor.
Ingredients: 1 cup dried adzuki beans. 8 cups water. 1/2 cup rock sugar or to taste. 1 piece dried tangerine peel. 2 pandan leaves, tied in a knot. 1/4 teaspoon salt.
Instructions: Run cold water over the adzuki beans until the water is clear. The adzuki beans, water, rock sugar, dried tangerine peel, and pandan leaves should all be put in a large pot together. Mix it all together and heat it up on high. Then lower the heat to low and let it simmer for an hour to an hour and a half, or until the beans are soft and the soup has thickened. To taste, add salt and mix everything together well. You can serve it hot or cold.
