A delightful twist on traditional Chinese fried rice with the addition of crispy buttery potatoes, providing a unique texture and flavor to this classic dish.
Ingredients: 2 cups cooked rice. 2 potatoes, diced. 2 tablespoons butter. 1 onion, chopped. 2 cloves garlic, minced. 2 carrots, diced. 1/2 cup peas. 2 eggs, beaten. 3 tablespoons soy sauce. 1 teaspoon sesame oil. Salt and pepper to taste. Green onions for garnish.
Instructions: Heat butter in a large skillet over medium heat. Add diced potatoes and cook until golden brown and crispy, about 10 minutes. Remove potatoes from skillet and set aside. In the same skillet, add a bit more butter if needed and saut onion, garlic, carrots, and peas until tender, about 5 minutes. Push vegetables to one side of the skillet and pour beaten eggs into the other side. Scramble eggs until cooked through. Combine cooked rice, crispy potatoes, cooked vegetables, and scrambled eggs in the skillet. Drizzle soy sauce and sesame oil over the mixture and toss to combine. Season with salt and pepper to taste. Garnish with chopped green onions before serving.
