This homemade chipotle adobo hummus offers a spicy twist on traditional hummus. The chipotle adobo sauce adds smoky heat, while the tahini and lemon juice provide richness and acidity. It's a healthy and flavorful dip that's perfect for parties, snacks, or as a spread for sandwiches and wraps.
Ingredients: 1 can 15 oz chickpeas, drained and rinsed. 2 cloves garlic, minced. 3 tablespoons tahini. 2 tablespoons fresh lemon juice. 1 tablespoon chipotle adobo sauce. 1/2 teaspoon ground cumin. 1/4 teaspoon smoked paprika. Salt to taste. 2 tablespoons olive oil. 2 tablespoons water or more as needed.
Instructions: In a food processor, combine chickpeas, minced garlic, tahini, lemon juice, chipotle adobo sauce, cumin, smoked paprika, and a pinch of salt. Blend until smooth, scraping down the sides as needed. While the food processor is running, drizzle in the olive oil and water until the hummus reaches your desired consistency. Taste and adjust seasoning if necessary, adding more salt or lemon juice if desired. Transfer the hummus to a serving bowl, drizzle with a little extra olive oil, and sprinkle with a pinch of smoked paprika for garnish. Serve with your favorite vegetables, pita bread, or chips.
