This barbacoa beef recipe for the slow cooker makes beef that is tender and full of flavor. It's great for tacos, burritos, or rice bowls. When you mix spices, chipotle peppers, and citrus juices together, you get a delicious dish with little work.
Ingredients: 3 lbs beef chuck roast, trimmed and cut into chunks. 1/4 cup apple cider vinegar. 1/4 cup lime juice. 4 cloves garlic, minced. 2 chipotle peppers in adobo sauce, minced. 1 tablespoon ground cumin. 1 tablespoon dried oregano. 1 teaspoon ground cloves. 1 teaspoon salt. 1/2 teaspoon black pepper. 1/2 cup beef broth.
Instructions: Apple cider vinegar, lime juice, chili peppers and garlic, cumin, oregano, cloves, salt, and black pepper should all be mixed together in a bowl. Put chunks of beef in the slow cooker. Put the vinegar mix on top of the beef. Put beef broth in the crock pot. Turn the heat down to low, cover, and cook for 8 hours, or until the beef is soft and can be shred with a fork. Use two forks to shred the beef after it's done cooking. That barbacoa beef can be put on rice, in tacos, or in burritos.
