This zesty salsa dip combines the smoky heat of chipotle peppers with the earthy flavor of roasted Hatch chiles, creating a deliciously addictive snack or topping.
Ingredients: 3 medium Hatch chiles, roasted, peeled, seeded, and diced. 2 chipotle peppers in adobo sauce, minced. 1/2 cup diced tomatoes. 1/4 cup finely chopped red onion. 2 cloves garlic, minced. 1/4 cup chopped fresh cilantro. Juice of 1 lime. Salt and pepper to taste.
Instructions: The diced Hatch chiles, minced chipotle peppers, diced tomatoes, chopped red onion, minced garlic, and chopped cilantro should all be put in a bowl together. Add salt and pepper to taste, then squeeze the lime juice over the whole thing. Make sure to stir the ingredients together well. Put the dish in the fridge for at least 30 minutes with the lid on to let the flavors mix. Use it as a dip for tortilla chips or on top of tacos or grilled meats.
