Ingredients: 1 lb shrimp, peeled and deveined. 2 tablespoons olive oil. 1 teaspoon chipotle chili powder. 1 teaspoon smoked paprika. 1 teaspoon garlic powder. Salt and pepper to taste. 1 cup cooked brown rice. 1 cup black beans, drained and rinsed. 1 cup corn kernels. 1 avocado, sliced. 1/2 cup cherry tomatoes, halved. 1/4 cup chopped cilantro. Lime wedges for serving. Optional toppings: shredded lettuce, diced red onion, salsa, Greek yogurt or sour cream.
Instructions: Put the shrimp in a bowl and add the garlic powder, chipotle chili powder, smoked paprika, salt, and pepper. Toss the shrimp around until they are well covered. Put the shrimp that has been seasoned in a skillet and heat it over medium-high heat. Each side should cook for two to three minutes until the shrimp is pink and fully cooked. Place cooked brown rice, black beans, corn, avocado slices, cherry tomatoes, and cooked shrimp in bowls. Add chopped cilantro on top and serve with lime wedges. You can add shredded lettuce, diced red onion, salsa, or Greek yogurt or sour cream if you want to.
