Ingredients: 1 1/2 cups chocolate cookie crumbs. 1/4 cup melted butter. 3 8 oz packages cream cheese, softened. 1 cup granulated sugar. 1 tsp vanilla extract. 4 large eggs. 1/4 cup all-purpose flour. 1/4 cup cocoa powder. 1/4 cup sour cream. 1/4 cup heavy cream. 1 1/2 cups semisweet chocolate chips. Whipped cream and chocolate shavings for garnish.
Instructions: Preheat the oven to 325F 160C. In a mixing bowl, combine chocolate cookie crumbs and melted butter. Press this mixture into the bottom of a 9-inch springform pan to form the crust. In a large mixing bowl, beat cream cheese until smooth and creamy. Add granulated sugar and vanilla extract to the cream cheese mixture, and beat until well combined. Add eggs one at a time, beating after each addition. In a separate bowl, whisk together flour and cocoa powder. Gradually add this dry mixture to the cream cheese mixture, mixing until well incorporated. Stir in sour cream and heavy cream until the batter is smooth. Fold in semisweet chocolate chips. Pour the cheesecake batter over the crust in the pan. Bake in the preheated oven for 45-50 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven, crack the oven door, and let the cheesecake cool inside for 1 hour. Remove the cheesecake from the oven and refrigerate for at least 4 hours, or until fully chilled and set.
