Milk Chocolate Coconut Brownie Cookies are a rich and chewy treat. In a delightful brownie-like texture, these cookies combine the flavors of milk chocolate and coconut.
Ingredients: 1 cup milk chocolate chips. 1/4 cup unsalted butter. 1/2 cup granulated sugar. 1/4 cup brown sugar. 2 large eggs. 1 teaspoon vanilla extract. 1 cup all-purpose flour. 1/4 cup cocoa powder. 1/2 teaspoon baking powder. 1/4 teaspoon salt. 1/2 cup shredded coconut.
Instructions: Preheat the oven to 350F 175C and line a baking sheet with parchment paper. In a microwave-safe bowl, melt the milk chocolate chips and butter in 30-second intervals, stirring in between, until smooth. Let it cool slightly. In a separate bowl, whisk together granulated sugar, brown sugar, eggs, and vanilla extract. Add the melted chocolate mixture to the sugar and egg mixture, and mix until well combined. Sift in the flour, cocoa powder, baking powder, and salt. Mix until just combined. Stir in the shredded coconut. Drop spoonfuls of the cookie dough onto the prepared baking sheet. Bake in the preheated oven for about 10-12 minutes, until the cookies are set around the edges but still slightly soft in the center. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
