These chocolate-covered strawberry banana pops are a sweet and healthy treat that you can eat on a hot summer day or whenever you want something sweet. You can add your favorite toppings and they're easy to make!
Ingredients: 2 bananas, sliced into halves. 8 strawberries, washed and dried. 1 cup dark chocolate chips. 2 tablespoons coconut oil. Assorted toppings optional: shredded coconut, chopped nuts, sprinkles.
Instructions: Insert popsicle sticks into the cut end of each banana half. Skewer each strawberry with a popsicle stick. Place bananas and strawberries on a parchment-lined baking sheet and freeze for 1-2 hours. In a microwave-safe bowl, melt chocolate chips and coconut oil in 30-second intervals, stirring until smooth. Remove bananas and strawberries from the freezer and dip each one into the melted chocolate, coating evenly. Optional: Roll chocolate-coated fruit in assorted toppings if desired. Place back on the parchment-lined baking sheet and freeze until chocolate is set, about 30 minutes. Serve and enjoy!
