Enjoy the rich and decadent flavors of these chocolate turtle cupcakes that you made yourself. The inside of these moist chocolate cupcakes is full of gooey caramel. There are chocolate chips and pecans inside, and a delicious caramel drizzle on top. Just what you need to satisfy your sweet tooth!
Ingredients: 1 and 1/2 cups all-purpose flour. 1/2 cup unsweetened cocoa powder. 1 and 1/2 teaspoons baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1/2 cup unsalted butter, softened. 1 cup granulated sugar. 2 large eggs. 1 teaspoon vanilla extract. 1 cup buttermilk. 1/2 cup semi-sweet chocolate chips. 1/2 cup chopped pecans. 12 caramel candies, unwrapped. 1/4 cup heavy cream. 12 pecan halves for garnish. Chocolate sauce and caramel sauce optional, for drizzling.
Instructions: Preheat your oven to 350F 175C. Line a cupcake tin with 12 cupcake liners. In a mixing bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside. In another bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs and vanilla extract to the butter-sugar mixture, and beat until well combined. Gradually add the dry ingredient mixture and buttermilk to the wet ingredients, alternating between them, starting and ending with the dry ingredients. Mix until just combined. Fold in the semi-sweet chocolate chips and chopped pecans. Divide the cupcake batter evenly among the 12 cupcake liners. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean. While the cupcakes are baking, in a small saucepan, combine the unwrapped caramel candies and heavy cream. Heat over low heat, stirring constantly, until the caramels are fully melted and the mixture is smooth. Once the cupcakes are done baking, remove them from the oven and allow them to cool in the pan for a few minutes. Then, transfer them to a wire rack to cool completely. Once the cupcakes are cool, drizzle each one with the caramel sauce and chocolate sauce optional. Top each cupcake with a pecan half for garnish.
