Chicken Noodle Stew with Onions
A hearty and tasty chicken enchilada chili that was inspired by Zupas. This is a great meal for when it's cold outside.
Ingredients: 1 lb chicken breast, cooked and shredded. 1 can black beans, drained and rinsed. 1 can diced tomatoes. 1 can corn kernels, drained. 1 onion, diced. 2 cloves garlic, minced. 1 cup enchilada sauce. 4 cups chicken broth. 1 tsp cumin. 1 tsp chili powder. Salt and pepper to taste. Tortilla strips, for garnish. Shredded cheese, for garnish. Fresh cilantro, for garnish.
Instructions: Diced onion and minced garlic should be cooked in a large pot until the onion is clear. Shred the chicken and put it in the pot along with black beans, diced tomatoes, corn kernels, enchilada sauce, chicken broth, cumin, and chili powder. Bring to a simmer, then let it cook for 20 to 25 minutes, stirring every now and then. Add pepper and salt to taste. Add tortilla strips, shredded cheese, and fresh cilantro on top while it's still hot.

The best kind of comfort food is this beef stew made in a slow cooker. The tender beef, hearty vegetables, and flavorful broth make this a filling meal that's great for cold days.
Ingredients: 2 lbs beef stew meat, cubed. 1/4 cup all-purpose flour. 1 tsp salt. 1/2 tsp black pepper. 1 tsp paprika. 1 tsp garlic powder. 4 cups beef broth. 1 cup chopped carrots. 1 cup chopped celery. 1 cup chopped onion. 2 cups chopped potatoes. 1 cup frozen peas.
Instructions: Coat the beef stew meat in flour, salt, pepper, paprika, and garlic powder. Do this in a bowl. Put meat that has been coated in the slow cooker. Carrots, celery, onion, beef broth, and potatoes should all be put in the slow cooker. Leave the lid on and cook on low for 8 to 10 hours or high for 4 to 6 hours, until the beef is soft. Add the frozen peas in the last 30 minutes of cooking. Enjoy while hot!

Instructions: Set Instant Pot to saut mode and heat olive oil. Add onion, carrots, celery, and garlic. Saut until softened. Add chicken broth, chicken breasts, egg noodles, thyme, salt, and pepper. Close lid, set valve to sealing, and cook on high pressure for 8 minutes. Once done, do a quick release and carefully open the lid. Remove chicken breasts, shred with forks, and return to the pot. Adjust seasoning if needed. Serve hot, garnished with fresh parsley if desired.
