I could use some help with customizing palettes

I’ve been spending hours trying to figure out how to customize a color table in Photoshop by hand-picking colors before I output to gif. Photoshop chose this 256 color table automatically using the “Adaptive” setting.

I want to remove some of those shades of green and manually replace them with different colors, in order to improve the image quality of the foreground characters at the expense of some minor loss of quality in the background. It seems like there would be an easy way to do this but so far I have not been able to figure it out or find any sort of guide online.

Can anyone help me out here? Please hit me up if you have any advice!

Edit: Specifically I want to be able to use the eyedropper tool to select a color, rather than choosing a color off a standard color picker.

Another way of putting it is that I’d still like Photoshop to pick a color table for me, but I’d like some way of telling it “use less green.”

If some tool other than Photoshop can do this better, I’m open to using that instead.
