Txirimiri is a basque style restaurant that actually has 4 locations! Normally, I am not someone that really enjoys “chains” or restaurants that have so many locations because I think the taste of the food suffers, but this place is so different. It opened in 2003 and has been successful in providing great food and catering! You can sit down for a nice meal or enjoy pinchos/pintxos and raciones at the bar. I visited the one in La Latina neighborhood, but there are 3 others in Salamanca, Retiro, and Moncloa-Rosales area.
I started off with foie plancha, mermelada de higos y sal Maldom. Look how the foie glistens with delicious fat and if you look really closely you can see the large Maldom salt granules. This is a perfect pinxto that satisfies all your taste buds. I loved the saltiness and sweetness contrast of the fig jam and Maldom salt. The foie was cooked perfectly! These pinxtos were really big too!
The next pinxto I tried was the solomillo de buey con cebolla caramelizada y pimiento del Piquillo. Thank goodnes for buey or ox. Buey is a castrated male bull that is fattened up so that I can indulge in. The meat was tender and rich. The salt on top nicely balanced the sweet caramelized onion and red pepper that was underneath that nice piece of meat. So far, Txirimiri is winning a spot in my heart!
Below is a falso risotto de verduras y bacalao. So basically, the best fake risotto with vegetables and cod ever. I got this during Gastrofestival Madrid and so happy that I did. It seems like a really simple dish of rice, vegetables, and fish, but Txirimiri does it right. I’m looking forward to going back and trying their rissoto de setas con foie y Pedro Ximenez and rissoto negro de langostinos, sepia y cilantro. Sounds so fancy and delicious!
I highly suggest Txirimiri if you want to try some flavors of the Basque Country. Pinchos are life!
