“We build restaurants relative to the architecture or the building that’s there. A lot of people [who have restaurant concepts] look for space and don’t consider the look or feel of the building because they’re going to fit it up. We tend to work with the architecture, the underlying history of the building, and that’s why we tend to go into older buildings and say, “What does this feel like?” We then paint it with the appropriate brush after we’ve determined what the building feels like. “I realized that there wasn’t quite the bakery that I wanted to work in and bake for which is a whole grain place. I baked for many years and then studied nutrition and I thought about how food was being prepared [in terms of] baked goods. I wanted to offer something that was more nutritious, more healthy, more wholesome and still stay within a traditional background. So I decided what I was going to do was mill flour and use all of what came out of the mill and use that to make whole grain treats. [Many people who come in don’t know] about the health nutrition aspect of it. They purchase or sample something here and I’ll say, “by the way, that was wholegrain” and they sometimes will be surprised very pleasantly. So I think that’s a success story because that helps me offer something better to the community without being preachy about it—and actually materially change people’s day. It’s one thing to say that we’re supposed to eat healthy and better but the truth is that if you don’t have a place to buy stuff where you can do that or make it, you’re not going to—it’s all theory. It would appear a lot of people seem to understand that and appreciate it.” – Joy Jones, owner of Made For You By Madeline on the inspiration for her shop.
