Today I'm making Coffee Brownies!
The recipe calls for instant coffee, but I don't have that. I have instant espresso. Which should be an improvement, actually.

For dinner tonight (and several more meals this week), I'm making Taco Salad. It came from Mimi's friend Bernetta.
Step 1 is to cook ground beef with onion. Always a promising start.
I'm sick as shit. Let's make a cake. With jello!
I don't have an angel food cake pan, so I'll be going with the "If baked in layers" option.

I forgot to take any photos of the process, but I made Autumn Pork and Apples.
It may not be autumn, but I thought it sounded good.
It is delicious!
I served it over garlic and parmesan instant mashed potatoes. They're an excellent addition.
Next time, I think I'll add more veg, since I'm not a side salad kind of person but it could use more veg. Plus carrots would add some crunch, which the apples are too well-cooked to provide.
