Ingredients: 1 lb ground turkey. 1 onion, chopped. 3 cloves garlic, minced. 1 bell pepper, diced. 1 can 15 oz diced tomatoes. 1 can 15 oz kidney beans, drained and rinsed. 1 can 15 oz black beans, drained and rinsed. 1 cup corn kernels fresh or frozen. 2 cups chicken broth. 2 tablespoons chili powder. 1 teaspoon cumin. 1 teaspoon paprika. Salt and pepper to taste. Optional toppings: shredded cheese, sour cream, chopped cilantro, diced avocado.
Instructions: In a large pot or Dutch oven, cook ground turkey over medium heat until browned. Add chopped onion, minced garlic, and diced bell pepper to the pot. Cook until vegetables are softened. Stir in diced tomatoes, kidney beans, black beans, corn kernels, chicken broth, chili powder, cumin, paprika, salt, and pepper. Bring the chili to a simmer, then reduce heat to low.
