Ingredients: 1 9-inch pre-baked tart shell. 5-6 clementines, peeled and segmented. 1/2 cup granulated sugar. 2 tablespoons cornstarch. 1/4 cup water. 1 tablespoon butter. 1 teaspoon grated clementine zest. Whipped cream or ice cream for serving optional.
Instructions: In a saucepan, combine sugar, cornstarch, and water. Stir until smooth. Add clementine segments and zest to the saucepan. Cook over medium heat, stirring constantly until mixture thickens and bubbles. Remove from heat and stir in butter until melted. Pour the clementine mixture into the pre-baked tart shell, spreading evenly. Refrigerate for at least 2 hours to set. Serve slices of the clementine pie tart with whipped cream or ice cream if desired.
