Ingredients: 1 box of white cake mix. 1 cup of whole milk. 1/2 cup of unsalted butter, melted. 3 large eggs. 1 teaspoon of vanilla extract. Food coloring red, yellow, green, blue, purple. 1 cup of mini marshmallows. 1/2 cup of colorful sprinkles. 1 batch of your favorite frosting buttercream works well.
Instructions: Warm up your oven to 350F 175C and put cupcake liners in a muffin tin. White cake mix, whole milk, melted butter, eggs, and vanilla extract should all be mixed together in a large bowl. Mix the batter well and until it is smooth. Make sure that the batter is spread out evenly between 6 bowls. To make the bright colors of the rainbow red, yellow, green, blue, and purple, add a few drops of food coloring to each bowl. Mix the colors in until they are well mixed in. Fill the bottom of each cupcake liner with a small amount of each color of batter. This will make layers of rainbow colors. In the middle of each cupcake, put a few mini marshmallows and press them down a little into the batter. Add more layers of the colored batter on top of each cupcake until the liners are about two thirds full. After the oven is hot, bake the cupcakes for 15 to 18 minutes, or until a toothpick stuck in the middle comes out clean. On a wire rack, let the cupcakes cool all the way down. After the cupcakes have cooled, frost them with your favorite frosting and top them with colorful sprinkles. Surprise your friends and family with these rainbow cupcakes when you serve them.
