Fiesta Chicken Quesadillas are a delicious and satisfying meal, packed with flavor and perfect for any occasion. Ingredients: 2 cups cooked and shredded chicken. 1 cup shredded cheddar cheese. 1 cup diced bell peppers mixed colors. 1/2 cup diced red onion. 1/4 cup chopped cilantro. 1/4 cup diced tomatoes. 1/4 cup sliced black olives. 4 large flour tortillas. 1 tablespoon olive oil. Salt and pepper to taste. Sour cream, salsa, and guacamole for serving.
Instructions: Add diced bell peppers, diced red onion, chopped cilantro, diced tomatoes, and sliced black olives to a large bowl. Mix the chicken and cheese together. If you want, you can add salt and pepper to taste. Set a big pan on medium heat and add olive oil to it. Place one half of the tortilla flat in the skillet and add a lot of the chicken mixture on top of it. To make a half-moon shape, fold the other half of the tortilla over the filling. It should be cooked for two to three minutes on each side, or until it is golden brown and crispy. Do it again with the rest of the tortillas and chicken mixture. Quesadillas should be served hot with sour cream, salsa, and guacamole. They should be cut into wedges.
