Banana Chocolate Chip Muffins- Gluten Free and Dairy Free

Eventhough my Detox is over, I find myself still following the guidelines of that diet. I went on a detox solely to find out what made me break out in hives randomly. I cut out dairy and gluten amongst other things. I’m happy to report I have not taken a Zyrtec in over 2 months! Yay me! 

I’ve continued to eliminate dairy and most gluten. I’m not allergic to gluten , nor do I have celiac disease. This is solely a personal choice for me. 

I wanted something chocolatey but not full of sugar, so I gathered my gluten free flours and choose a few to make this.

 What I used:

1 cup of ground fine rolled oats

1/2 cup brown rice flour

1/4 cup ground flaxseed

1 tsp of baking soda

1/2 tsp salt  

1/2 tsp cinnamon  

1/3 cup sugar

1 large egg

1/3 cup of canola oil

1 tsp vanilla extract

3 very ripe bananas

1 cup of semi sweet chocolate chips

 What I did: 

Combine all the dry ingredients in a bowl.  

Mash up your bananas in a separate bowl with a fork. Add the egg and oil to the bowl with the bananas. Mix it.

Add the banana mixture to the bowl with the dry ingredients. Add the chocolate chips. Lightly mix just until the dry and wet ingredients are combined.  

Fill muffin tins 3/4 of the way up. This makes 12 muffins. 

Bake at 350 until a toothpick stuck in the middle comes out clean. Maybe about 15-20 minutes.
