Ingredients: 3 lbs pork shoulder, trimmed and cut into chunks. 1 cup orange juice. 1/2 cup lime juice. 1/4 cup olive oil. 4 cloves garlic, minced. 2 tsp cumin. 2 tsp oregano. 1 tsp salt. 1/2 tsp black pepper. 1/2 cup chopped cilantro. 1 onion, thinly sliced. 1 bell pepper, thinly sliced. 1/2 cup diced tomatoes. 1/4 cup chopped fresh mint leaves.
Instructions: In a bowl, mix together orange juice, lime juice, olive oil, garlic, cumin, oregano, salt, and black pepper. Place pork shoulder chunks in the slow cooker. Pour the juice mixture over the pork. Add chopped cilantro, sliced onion, sliced bell pepper, and diced tomatoes to the slow cooker. Cover and cook on low for 8 hours or until the pork is tender. Once cooked, shred the pork using two forks. Serve the shredded pork topped with fresh mint leaves.
