Ingredients: 4 lbs pork shoulder, boneless. 1 cup orange juice. 1/2 cup lime juice. 1/4 cup apple cider vinegar. 4 cloves garlic, minced. 2 tsp ground cumin. 2 tsp dried oregano. 1 tsp smoked paprika. 1 tsp sea salt. 1/2 tsp black pepper. 1/4 tsp cayenne pepper. 1 large onion, sliced.
Instructions: In a bowl, combine orange juice, lime juice, apple cider vinegar, garlic, cumin, oregano, paprika, salt, pepper, and cayenne pepper to create the marinade. Place the pork shoulder in a large resealable bag and pour the marinade over it. Seal the bag and refrigerate for at least 4 hours or overnight. Preheat the oven to 325F 163C. Place the marinated pork shoulder along with sliced onions in a roasting pan. Cover with foil. Roast in the preheated oven for 3-4 hours or until the pork is tender and easily shreds with a fork. Remove the foil and increase the oven temperature to 400F 204C. Roast for an additional 15-20 minutes to crisp up the edges. Once done, let the pork rest for a few minutes before using two forks to shred it. Serve the juicy Cuban pulled pork on a bed of lettuce or as desired.
