Instructions: In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt. In a separate large bowl, cream the butter and granulated sugar until light and fluffy. Beat in the egg, red food coloring, and vanilla extract until well combined. Gradually mix in the dry ingredients, alternating with the buttermilk, until the dough comes together. Divide the dough in half and shape each half into a disk. Wrap in plastic wrap and refrigerate for at least 1 hour. Preheat the oven to 350F 175C and line baking sheets with parchment paper. On a floured surface, roll out the chilled dough to about 1/4-inch thickness. Use cookie cutters to cut out desired shapes and place them on the prepared baking sheets. Bake in the preheated oven for 8-10 minutes, or until the edges are set. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely. Once the cookies are completely cool, you can decorate them with icing or sprinkles if desired.
