Ingredients: 1 cup of all-purpose flour. 2 tablespoons of cocoa powder. 2 tablespoons of sugar. 1/4 teaspoon of salt. 1 1/2 cups of almond milk. 2 tablespoons of vegetable oil. 1/2 teaspoon of vanilla extract. 1/4 cup of dairy-free dark chocolate chips. Vegan butter or oil for cooking.
Instructions: In a mixing bowl, whisk together the all-purpose flour, cocoa powder, sugar, and salt. Gradually add the almond milk, vegetable oil, and vanilla extract while whisking continuously to create a smooth batter. Let the batter rest for about 10 minutes to allow it to thicken slightly. Stir in the dairy-free dark chocolate chips into the batter. Heat a non-stick skillet or crepe pan over medium heat and add a small amount of vegan butter or oil to grease the pan. Pour a ladleful of the crepe batter into the hot pan, swirling it around to spread it thinly and evenly. Cook for about 2-3 minutes or until the edges start to lift and the bottom is golden brown. Carefully flip the crepe using a spatula and cook the other side for an additional 1-2 minutes until done. Repeat the process with the remaining batter, adding more vegan butter or oil to the pan as needed. Serve the vegan dark chocolate crepes warm, garnished with fresh berries, a drizzle of maple syrup, or a dusting of powdered sugar.
