Ingredients: 4 halibut fillets 6 ounces each. Salt and pepper to taste. 2 tablespoons olive oil. 1 pint cherry tomatoes, halved. 1 avocado, diced. 1/4 cup red onion, finely chopped. 1/4 cup fresh cilantro, chopped. 2 tablespoons lime juice. 1 clove garlic, minced. 1 jalapeno pepper, seeded and minced.
Instructions: Warm the grill up to a medium-high level. Salt, pepper, and olive oil should be used to season the halibut fillets. Fish should be cooked all the way through on the grill for four to five minutes on each side. Put avocado, red onion, cilantro, lime juice, garlic, and jalapeo pepper in a bowl. Add cherry tomatoes and mix well. To taste, add salt and pepper to the salsa. Serve halibut that has been grilled with tomato avocado salsa on top.
