These Bacon and Egg Muffins are a perfect grab-and-go breakfast option. Packed with protein and vegetables, they are a tasty and nutritious way to start your day.
Ingredients: 6 large eggs. 6 slices of bacon. 1/2 cup diced bell peppers. 1/2 cup diced onions. 1/2 cup diced tomatoes. 1/2 cup shredded cheddar cheese. Salt and pepper to taste. Cooking spray.
Instructions: Set the oven to 350 degrees Fahrenheit 175 degrees Celsius and spray cooking spray inside a muffin tin. Crisp up the bacon by cooking it in a skillet. After taking it out of the pan and allowing it to cool, break it up into tiny pieces. Saute the chopped onions and bell peppers in the same skillet until they are soft. Whisk the eggs and add salt and pepper to taste in a bowl. Evenly distribute the diced tomatoes, crumbled bacon, sauted veggies, and shredded cheddar cheese among the muffin tin cups. Approximately two thirds of the way full, pour the seasoned eggs over the bacon and vegetable mixture in each cup. Bake for 20 to 25 minutes, or until the tops of the egg muffins are set and beginning to turn golden, in a preheated oven. Take them out of the oven and allow to cool down for a couple of minutes before taking them out of the muffin tin. Enjoy your tasty and nutritious bacon and egg muffins while they're still warm!

These everything bagel breakfast pockets made in an air fryer are a tasty and simple way to start the day. Inside a crispy everything bagel are scrambled eggs, bacon, and cheddar cheese. Great for a quick and filling brunch or breakfast!
Ingredients: 2 everything bagels, sliced. 4 large eggs. 1/4 cup shredded cheddar cheese. 4 slices cooked bacon, crumbled. 2 tablespoons chopped fresh chives. Salt and pepper to taste.
Instructions: Get your air fryer ready by heating it up to 350F 175C. To make pockets, cut the bagels in half and hollow out the middles. Whisk the eggs, cheddar cheese, bacon bits, and chives together in a bowl. Add pepper and salt. Divide the egg mixture evenly between each bagel pocket and put some in each one. Make sure there is enough space between the filled bagels in the air fryer basket. Put them in the air fryer for 10 to 12 minutes, or until the pockets are golden brown and the eggs are set. If you want, you can serve it hot with extra chives and a sprinkle of everything bagel seasoning on top.

Instructions: Preheat your oven to 350F 175C and line a muffin tin with paper liners. In a mixing bowl, whisk together the flour, baking soda, and salt. In another bowl, cream together the softened butter, vegetable oil, and granulated sugar until well combined. Add the mashed bananas, sour cream, vanilla extract, and eggs to the wet mixture. Mix until smooth. Gradually add the dry ingredients to the wet mixture and stir until just combined. In a separate bowl, mix the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Fill each muffin cup halfway with the banana muffin batter. Add a spoonful of the cream cheese mixture on top of the banana batter in each muffin cup. Top the muffins with another spoonful of the banana batter to cover the cream cheese filling. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean. Allow the muffins to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely. Serve and enjoy!

Place the dough in a greased bowl, cover it, and let it rise for 1 hour, or until doubled in size. Punch down the dough and roll it out to about 1/2-inch thickness on a floured surface. Cut out rounds using a biscuit cutter or a glass. Dust each round with cornmeal. Heat a skillet or griddle over medium-low heat and cook the muffins for about 5-7 minutes on each side, until golden brown and cooked through. Cool on a wire rack before serving.

Instructions: In a bowl, beat the eggs and season with salt and pepper to taste. Lay out an egg roll wrapper with one corner facing you. Place a portion of the beaten eggs in the center of the wrapper. Sprinkle shredded cheddar cheese, diced bacon, bell peppers, and onions on top of the eggs. Fold the bottom corner of the wrapper over the filling, then fold in the sides, and roll it up tightly, sealing the edge with a little water. Heat cooking oil in a deep frying pan to 350F 175C.
