So this morning (before 6am…) I did over 200 squats and rowed over 2000 meters…. and that was just small portions of the class. Right now, I feel fantastic… but I’m taking applications for who can come lift me out of bed in the morning. Yowza!

Order up!!! Aubergine + spinach vege burger on portobello buns with a side of rosemary-baked wedges.
Sandwich-press everything between two pieces of baking paper or grill then build: 1 portobello mushroom, 1 thin slice of eggplant, 2 thin slices (or one mother slice) of tofu, a handful of spinach leaves, 1 whole tomato squashed with garlic + top with 1 portobello sprinkled with sesame seeds!
For the wedges, cut 2 small potatoes into quarters, sprinkle with rosemary and bake (no oil needed) in the oven until crispy. Serve with a side of homemade tomato dipping sauce, or a spoonful of the least nutritionally-offensive store-bought stuff if you’re pressed for time.
