This colorful holiday detox salad is a perfect way to refresh your body after indulging during the holidays. Packed with a variety of fresh vegetables, crunchy chickpeas, and a tangy vinaigrette, it's a delightful and nutritious choice.
Ingredients: 2 cups mixed greens e.g., spinach, arugula, kale. 1 cup cherry tomatoes, halved. 1/2 cup cucumber, diced. 1/2 cup red bell pepper, thinly sliced. 1/2 cup yellow bell pepper, thinly sliced. 1/4 cup red onion, thinly sliced. 1/4 cup shredded carrots. 1/4 cup broccoli florets. 1/4 cup cauliflower florets. 1/4 cup roasted chickpeas. 2 tablespoons sunflower seeds. 2 tablespoons feta cheese optional. 2 tablespoons balsamic vinaigrette dressing.
Instructions: As shown, wash and prepare all the vegetables. Apple slices, cucumber, red and yellow bell peppers, red onion, shredded carrots, broccoli florets, and cauliflower florets should all be put in a large salad bowl. Put sunflower seeds and roasted chickpeas on top of the salad. If you want to add more flavor, you can crumble feta cheese on top. Pour the balsamic vinaigrette dressing over the salad ingredients in a thin layer. Gentle toss the salad to coat all the ingredients with the dressing and mix them all together. Serve right away as a colorful and healthy holiday detox salad.
