An alternative when you have curry leftovers... or just want to give a different twist to the classic Japanese dish.
Japanese dry curry is literally a compact, dried version of curry rice. Less water basically means that you will get a curry dish with a more concentrated flavor - you mix everything and eat it like a risotto.
This dish was featured on the manga/anime Amaama to Inazuma - it's a quite charming and emotional episode, if you're read/seen it you probably remember how their homemade version of dry curry was very treasured by the Inuzuka family.
The standard seasoning is slightly different from the curry, slightly sweeter. The traditional recipe usually says that raisins are a must - not everyone fancies these, I’ve decided to alter my version a little bit with chopped apples, giving it extra sweetness and sourness.
You can make this from scratch or using some leftovers... A good opportunity to try this out is when there's not enough roux to make more curry rice from an unused serving - while, at the same time, you feel like it is a sad waste to throw away that delicious bottom-of-the-pan leftovers.
Recipe
200g of of ground meat (I used a mix pork and beef)
2 garlic cloves, minced
1 onion, diced
1 apple, cut in pieces
25g of raisins
2tsp of curry powder to season the meat
2tbsp of curry powder for the sauce
1tsp of cumin powder
Steps
Season the meat with salt, pepper and 2tsp of curry powder. Mix well to combine.
Set a hot pan on high heat, then add some oil.
Stir fry the onions until they become translucent.
Add 2tbsp of curry powder, cumin powder to the pan and toast the mix really quickly (around 30 seconds).
Add the garlic, the meat and stir fry everything until cooked.
Add the apple and the raisins. Cook until the apple is softer.
Serve the dish with rice.
Tips
You can add a kick of red pepper powder in the mix for extra spicyness!
For a more balanced version, you may add small diced root vegetables - for instance, carrots and potatoes. Be sure to use tiny cuts in order to make everything cook fast enough.
If you use curry rice leftovers to prepare this recipe, replace the spices with the leftovers and reduce the liquid portion until it is all dried.
