Sang. Ginseng (Panax spp, in this case Panax quinquefolius) gets much— but not all—of its medicinal potency from certain substances that are classified as steroidal saponosides. Steroid means that they have a 17-carbon three-ring molecular structure, like testosterone and cortisone and other steroids. Saponin means, among other things, that they form suds when agitated in the presence of water. A quick shake has given this test tube of ginseng tincture a nice lofty head of foam. Some commercially available ginseng preparations do not strongly display this feature, either because they contain little ginseng or because the ginseng they contain doesn’t have much ginseng-ness. . . . The ginseng used in this example is wild american ginseng, from the roots of plants that are not only mature but large and old (15+ years), and growing in very favourable conditions in the Appalachian mountains. It is from two different stands, one of which i found in 1997 and one of which was introduced to me in 1979. The good reputation of ginseng derives in part from plants and stands like these, which used to be the usual source, but are much less so now in the age of mass-market demand and large-scale production.
