A tasty and healthy Instant Pot Chicken Marsala with a Marsala wine sauce that is okay for the 21 Day Fix. Great for a quick and healthy dinner.
Ingredients: 4 boneless, skinless chicken breasts. 1 cup sliced mushrooms. 1/2 cup diced onion. 3 cloves garlic, minced. 1 cup Marsala wine. 1 cup low-sodium chicken broth. 1 teaspoon dried thyme. 1 teaspoon dried rosemary. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 1/4 cup whole wheat flour. 2 tablespoons olive oil.
Instructions: Season chicken breasts with salt, pepper, and coat with whole wheat flour. Set Instant Pot to 'Saut' mode, add olive oil, and brown chicken on both sides. Remove and set aside. Saut mushrooms, onions, and garlic until softened. Pour in Marsala wine, scraping up any browned bits. Allow it to simmer for 2 minutes. Add chicken broth, thyme, and rosemary. Stir well. Place browned chicken back into the Instant Pot. Secure the lid, set to 'Sealing', and cook on 'Manual' for 8 minutes. Once done, perform a quick release of pressure. Serve the chicken with the Marsala sauce over a bed of cooked quinoa or whole wheat pasta.
