Easy Mediterranean Baked Fish Recipe - Simple & Delicious
Tonight's dinner: A sheet pan meal of roasted kielbasa and veggies. Roasted Kielbasa and Veggies 1 lb. yellow or red baby potatoes 1 large yellow onion 1 package baby carrots 14-16 oz. kielbasa 1/4 cup olive oil, plus more for the pan 2 t. lemon juice 1/4 t. pepper 1/2 t. salt 1 t. dried thyme 2 t. paprika 2 t. dried parsley Preheat the oven to 400 degrees F. Line a sheet pan with oiled foil. Wash the potatoes. Halve or quarter them and slice the onion into thick strips. Place the veggies into a bowl. Slice the sausage into thick rounds and add them into the bowl. Drizzle with olive oil and lemon juice, season with salt and pepper, thyme, and paprika, and toss well to coat. Arrange on your prepared pan. Bake for 50 minutes, stirring every 15-20 minutes. Tonight's dinner: Sheet pan chicken and veggies! Chicken and Veggies 1 package Italian dressing mix 1 lb. (453 g) baby carrots 1 lb. (453 g) baby Yukon Gold potatoes 2 T. olive oil 4-6 bone-in, skin-on chicken thighs 8 oz. (226 g) French green beans 2 T. butter Preheat the oven to 400°F (205°C). Line a sheet pan with foil. Reserve 1 t. Italian dressing mix. Toss the rest with the carrots, potatoes, and olive oil. Arrange the mixture onto the baking sheet. Nestle the chicken amongst the potatoes and carrots. Sprinkle with remaining Italian dressing mix and season with salt and pepper. Bake for 35-40 minutes or until chicken is golden brown. Set chicken aside, add the green beans to the other veggies, and toss to coat. Return chicken to the pan and return the pan to the oven, baking for 8 minutes or until green beans are crisp-tender. Time for another simple supper. Using some basic ingredients I got at @stlawrencemarket, I decided to make an omelette for dinner. I added in some fresh dill and grated some lemon zest into the eggs. It added a nice bright taste. I was into my second bowl of this delicious mushroom Stroganoff before I remembered to take a picture. This was very easy to make and even easier to eat! From start to finish, it was under 30 minutes to cook. I used a mix of portobello and white mushrooms. Roughly chop them. Sautee in lots of butter with a diced onion. Season with salt, pepper, chili flakes and thyme. Toss in a cup or so of sour cream and a splash of brandy. Let it all simmer for about 15 minutes and done! I served this on some fresh pasta noodles from @stlawrencepasta and grated some parmesan (which isn't in the recipe, but I just love cheese). Super simple dinner tonight. I cooked some chickpeas earlier this afternoon. Cooking them from dry makes the chickpeas much creamier than using canned (although nothing wrong with using canned). A clove of garlic, a glug of olive oil, a squeeze of lemon and a pinch of salt.
