Need a breakfast idea? These are perfect for grabbing on the go! These tasted way better than I thought! Typically during contest prep, yolks are cut out, which is why I haven't been a big fan of egg whites. Normally when I scramble them they are just too runny & don't have the same consistency as regular eggs and I used to eat them under protest, however, preparing them as egg white muffins made a BIG delicious difference! Here's the recipe just in case you want to try something new for breakfast...this was modified from my original egg muffins recipe for contest prep mode. Egg Muffin Bites Chopped onions chopped spinach chopped mushrooms chopped grilled chicken Egg whites or (6) regular scrambled eggs Black pepper, Mrs Dash seasoning, your favorite spices *Combine veggies and chicken in a bowl and mix well. *(optional, saute' the veggies then add chicken.) * Place an equal amount of veggie/chicken mixture into the muffin pan using a cookie dough scoop. *Pour the eggs over the mixture in the muffin pan. Bake for 20-25 minutes or until the eggs are completely done. **Optional if you add cheese: Bake for 15-18 minutes then add your choice of shredded cheese and bake again for 5-8 minutes or until the cheese is melted. The possibilities are endless on what you can add to your egg muffins!
